Availability is hard to answer.
For the ST, a lot of upgrades exist(ed):
- Clockspeeders (16/24/36 MHz + Cache)
- Processor replacements (68020/68030)
- Graphic cards (MegaBus)
- Memory expansions (up to 12 MB)
Most of them are hard to get nowadays, usually involve soldering and some minor "incompatibilities" with certain software.
For the Falcon, the range was wide, too:
- Busspeeders (18/20/24/25 MHz)
- Clockdoublers (32 MHz CPU on 16 MHz Bus)
- CPU replacements (68030/040)
- FastRAM expansions (8 MB usually)
- Resolution Enhancers (Screenblaster etc)
- Graphic cards (SuperNOVA)
Clock doublers are easy to get and even relatively easy to build yourself, but usually don't lead to much speed-up. All other expansions are by now rather hard to get with the only exception being screen resolution enhancers.
