If it's the games and nothing else you're after, then you should get a TOS 1.0 1MB STf and a TOS 1.6 1MB STe (for the extended games). That should cover about every game ever released for ST(e).
Mega STe have problems thanks to a newer TOS (2.05/2.06) and dirty coded games. Mega ST suffer a bit from the same if it has TOS 1.4 (rainbow). So the safest bet are the above machines.
