Unfortunately, browsing CDs will cause lots of reboots. This isn't due to the Falcon being flaky, but rather that the program is expecting a certain screen resolution (and doesn't exit gracefully) or expects to write to the current directory (which certainly won't work on a CDROM!). There are also a lot of games and demos that make a change to memory and don't change back when you quit them!
Falcon TOS does have a bit of memory leakage, so you'll have to reboot every few weeks, but when running application software you should expect stability. Games and demos just tend to not be as carefully written IMHO.
