Well, its possible but not easy. You have to archive the disks on the Atari into .ATR files. You then have to use a terminal program to transfer the files to your Mac. This will require either having a modem or an Atari 850 interface for the 8-bit.
If you have a modem you can dial into the Mac and transfer the files that way. If you have the 850 you can use a null modem cable.
However, if the programs on your 5 1/4" disks are mainly commercial games you will probably have better luck just downloading the archived disks from the internet. Search Atari 8-bit archive on google or here at Atari.org, you'll find thousands of programs are available.
I have personally sent many files from my G4 Cube to my 8-bit via null modem cable. I have then exploded the archived file into real 5 1/4" disks. It works really well, but its a slow process.
