It was actually only 7.14MHz in the original macintosh, and 5MHz in the Lisa (the chip itself was rated at 8MHz but it was underclocked so it could sync the video properly).
It was present in the Megadrive/Genesis running at 16MHz, along with the Jaguar (Which Darryl Still, then head of marketing at Atari UK claimed was 'only there to read the joystick ports'
The version commonly used in Palm PDAs is a revision known as 'Dragonball VZ' which usually clocks at 16-20MHz and has an inbuilt greyscale LCD controller (This is why the screen gets darker when you overclock a Palm)
I found a 16MHz 68000 in my Laser printer - a Kyocera FS-400
I believe it was also used in Amstrad's fairly recent Mac-a-like, the PCW16. I'm prolly wrong about this.
It's also popular as an embedded controller (especially because Motorola now licence it as a design component in custom ICs) so you can find one in burglar alarm panels, washing machines, industrial control systems, electronic sewing machines etc.
