I'm in Melbourne too, so I'm not much good to ya Jack! You will *occasionally* see an ST with monitor for sale on eBay in Sydney.
I remember a not too long ago (a year or 2) there was someone in Sydney selling STEs with 4 meg of ram, Tos 2.06, high density drive, internal IDE hard drives, composite video/audio ports, etc. They were asking too much though... $450 or something like that. But anyway, that tells me there is someone in Sydney who is pretty into STs and would be able to help you. I'm afraid I don't have any contact details, but try spending some quality time with Google and see what you can find!
