Perhaps E.P.S.S. can be something? I assume you want to you the STe audio, but compose it with a midi keyboard? If not, sorry for the misunderstanding.
E.P.S.S. can do 8-channels on a plain STe, and takes MIDI input from a keyboard or sequencer. It can also be used together with Cubase as a "plugin" for audio.
