The ST doesn't use virtual ram like a PC. When it runs of memory, it just runs out! So adding more memory won't make things any quicker, because there is no swap file involved.
Not may applications use the extra memory anyway.
Some pompey-pirates games would detect how much memory you had, and load more of the game into memory if you had it, to minimise or eliminate disk access.
More memory will allow you to have bigger ram-disks, have larger documents open (eg in Degas paint, you can have longer animations, you can play longer sound samples)
