Hi Neil,
If it is a 1040STM, 1040STFM or a 1040STE, you will be able to use it through a television, or anything that accepts composite video-in, such as most new LCD monitors (adding composite video-out to the above-mentioned STs is not hard, and requires a only few $ worth of parts).
If you have a TV that has a SCART input, you'll get a better image using a SCART cable.
If it a plain 1040ST or 1040STF, then you will need an RGB monitor (eg atari SC1224, SC1435, Commodore 1084, Philips CM8833, Thomson 4165, Amstrad 464 or 6128 monitor).
Finding the right cables for some of these monitors will be difficult, and you may have to make your own. Diagrams of pinouts are not hard to find though :)
You can also use a VGA/SVGA monitor in monochrome modes, or a multi-sync SVGA or VGA for colour modes.
Again, you'll probably have to make the right cable...
