Get an USB floppydrive, format 720DD disk on the Atari with a program that makes 100% PC-compatible disks. Kobold does it, but that's commercial. There are probably some free formatters as well (Fastcopy?).
Then copy the files onto the floppydisk and read it in the usb-floppydrive on the mac.
About notator -> other program fileformat conversion is a completely different story and I have no clue for that more than that later Notator versions on the mac should be able to read the older files from the atari (that means logic).
Some people also connect midi-out on the atari to midi-in on another machine and records the songs like that, something that works for every program no matter what fileformat it has.
