Don't have the time to be very comprehensive (!!) , but in answer to your questions:
* Yes, you can hook it up to TV or 1084. If you want to put it through it's paces, see what it can do, I think there will be a lot more that will interest you in "the world of colour". However, everyone's different, and I'm not sure what would interest you.
Monochrome is usually used for applications - word processing, music etc. There werea few games, I know of a site that has about 5 mono games to dload, but I don't recall the URL...
* The only "proper" way to upgrade the TOS is to replace the ROM chip. There are programs that allow you to load different TOS verions off disk (seltos is one IIRC)
A lot of people also use alternative desktops with whatever TOS they are stuck with. Alt desktops include Neodesk, Thing, Ease, MagiC
