Have to agree with Chris here, I've been working on my own ST items, ps/2 mouse being one of them, but only when I have a little spare time, because in the long run, its hard to break even. Development time has a cost, Making a few bucks per unit has little chance of paying that back, and to make anything reasonably priced, you have to purchase components in large lots, most of which end up in a drawer at your workbench because more than half the people who said they will buy something disappear when the part is actually available.
Then, there's the 'unforseen problem' problem, which I think will definately show up on the mouse adapters. You test your stuff with everything you can find, but invariably, there will be those machines or peripherals that are just a little outside the spec that dont work, and end up consuming your time because you want to make it right, and that time can become large! I have yet to find two PS/2 mice that respond exactly the same way. the spec is pretty loose on timing, and manufacturers have filled the spectrum. When you have the luxury of an entire pc, your driver can accomodate a lot, when its just a PIC, well, things get interesting.
