You can use the Eiffel interface which allows you to use a PS/2 keyboard and mouse with your ST. Rory McMahon sells them here:

You can make an inexpensive SVGA monitor adapter for the ST that will give you monochrome resolution only. Instructions are available here:

Color resolutions require a more expensive scan-doubler adapter.
