Asking that question tells me that you have never tried to create a masterpiece have you?
Im not saying that I have, but, I have loads of kit, I used to have loads more than I have now, as I am only re-building my collection up slowly now, but here is what I have...

Now, sure enough, some of my stuff simply dont use half of that lot, but then again, the rest of it does!
One keyboard, and no matter what you may think, can do everything. Sometimes there is a use for more than one. Most keyboards can only play a certain number of notes at a time and all are limited to a max of 16 channels. Yes, this is ample for most things, but its also a limiter too!
Its like that little TQ5. My gods, its so cheesy, its nasty, but then again, there are a couple of sounds that I have conjured up, that are absolutely delicious and I have never managed to get that sound with anythign else, so sure, its staying in my collection.
The Alesis isnt the best drum machine in the world, in fact these days its quite poor, but then again, it takes the strain away from the rest of the synths so they can concentrate on their own work properly.
The CBX is XG, thats got 600+ sounds, but its simply not enough variation... a lot of those sounds are variations on other sounds, so in the end you are left with basically standard GM sounds and a few others thrown in, the Korg is GM and a custom Bank thats adjustable, and these sounds that you edit are simply unavailable on a single stock keyboard unless its a real expensive high end job, the TGs are their own little world being no standard at all, but again, they too have a custom bank that I can edit to suit my own personal needs, and I do.
Each has their own sounds too! - take the percussions as one example... If I had just one keyboard, and lets say its a good one, I might perhaps have 3, 4, or more percussion styles, ROCK KIT, JAZZ Kit, Standard Kit and so on, and each of these will have a couple of different kick drum sounds, giving a fair choice of "THAT" Sound, but sometimes its simply not good enoug, you can get close, but you just cannot get close enough to how you want it, so, you try out another kick sound from another keyboard or expander.
Then of course there is my personal favourite and that is that I am simply too bone idle to write my songs in a way that only needs 16 tracks.
Hell, last time I did mary had a little lamd, I somehow managed to use 32 ( Thats a joke by the way... It was only 31 LOL )
Seriously, there are many many reasons to have more than one Midi port giving only 16 channel2, those I have mentioned are a tiny fraction of them.
