Sounds like you're almost there.
When you run HDRUTIL, you should click "Partition" under the menu item "Media". This should open a dialogue in which you can select the EZ Flyer with its cartridge inserted.
Then you can select partition type and size.
If you don't want to boot from it, that's basically all you need to do. After rebooting from your harddisk, the freshly partitioned EZ Flyer should be available.
