If you used FCOPY or similar program they oftern have an option to do a "Fast Format" as does Windows. This option simply overights the FAT but eseentially leaves the data untouched.
If you did these then something like Knife ST will enable you to rescue the data, this is also true if you realised half way through the format then you will have only lost half the data.
This is not much good for real data (such as programs) as they are hard to find - you can find text files simply though.
I had a duf disk which had some MODs on it, I used STOS to load every track off of a disk and then used the Altimate Ripper Catridge to search for them - this sould also work for pictures, MODs, Quartet, Chip Music, etc.
None of this is 100% buy far - the MODs had a number of problems (I imagine from Fragmenting), but it was not hard to put them back to gether.
