I have been doing some research and asked some Amiga guys if this was true.
They say that Amiga technology wise is just as capable Sound wise as any other platform. You can easily use high-quality 16-bit audio cards (i.e. http://www.aliendesign.net/repulse/). Some people even use an 4 MB Yamaha DBX-50 MIDI wavetable.
They say the difference in professional software availability is mainly because of difference in marketing. Amiga never was targeted at MIDI professinals. A second reason is that there are many high-quality free software on aminet to download.
And they also state than a big box Amiga (A2000/3000/4000) technology wise would be much more suitable than an old Atari ST etc for sound editing because of the many expansion abilities (Zorro slots etc). In theory every hardware that can be connected to an Atari can also be connected to an Amiga. Only the developers have to support the plaform. According to them the OS isn`t a limitation either.
