Like Flash already answered, the limit in an
unmodified ST(E) is 4 MB RAM, in an STE by
4x1 MB SIMMs.
There have been RAM-cards, the latest one by
Software Service Seidel, to fix that problem
and these cards allowed up to 12 or sometimes
even 16 MB RAM but _not_ in continuous memory
anymore.
Most of them weren't made for the STE either.

About your harddisk:
Even for an RLL or MFM drive you would need
a hostadapter/controller.
These can easily be found in SH20x drives,
Megafiles, Vortex HD-Plus or other ones.
You should be careful though, usually, these
controllers can only handle very specified
sizes of the disks - due to the way that an
RLL or MFM disk is controlled.
