You could go to DHS and download something like Music Mon

http://www.dhs.nu/

Click on Utils on the left.

If you want to sample an ST making noises and then use a PC to mix them together (i.e. Module Player/Editor) then I would use Winston and then record the YM to a sample - you could use Music Mon to play sounds you like and then record them.
