Utopos has STe digital music, hardware scrolling and a splitscreen mode for two players that uses STe hardware scrolling as well. Probably uses blitter as well.
Obsession (Flipper game by UDS) uses harware scrolling and a glitch in the STe video chip to get 336 pixels wide screen, additionaly it plays a module on STe DMA and sound effects using YM samples.
I believe Substation (Also UDS) also uses blitter and DMA sound.
Wings of death (Thalion) also uses blitter and DMA sound if available.
Wrath of the demom (Ready soft) uses STe colors ;-)
