Hmm, don't want to interfer, but I think there is no really need to use an ultimate ripper rom under an emulator...
For instance to save the memory under Pacifist, you just have to enter
sb filename.bin 00000000 00100000
And then you can look in this binary memory file what you're looking for using some special tools that replace the cartridge programme.
Eg: a soft ripper like adr or positivy ripper, or even a pc one. I used to ripp mods by this way and it worked well...
For ripping graphics, you can try to searsh for the common ST picture format like pi1, neo etc. Btw you will even get the colour palette
