Yikes, that's a big job. Here's a brief overview...
Atari went out of business, leaving OS development to split into two groups, Magic and MiNT. Both are significantly improved from TOS. In France, I would recommend you look at Europe Shareware (website is in French).
Essentially, here's what you missed followed by a couple of examples on each topic:
Modern word processors, databases, etc. (Papyrus, Texel)
Driver software for CDRW, scanners, and digital cameras (Extendos, ScanX Pro, Phototip)
Improved desktop interface (NAES, Djinni) {hope I spelled that right}
Multitasking (Geneva, MiNT, Magic)
Vastly improved internet services (MyMail, Aftp) {actually, the only weak link is the webbrowser}
Accelerators and faster hardware (Milan, Centurbo)
In short, we're missing Java, Javascript, and all those plug-ins for the WWW. Other than that (and the fact that new games are few ), you can do practically anything on your Atari that you can do on any other computer. Of course, you'll do them slower.
As for what you need to do to upgrade your machine, the simple answer is nothing. Just use it. Should you find something you WANT to do with your machine that you currently cannot, we'll help you get the software and/or hardware required.
As for myself, I've been concentrating on attaching hardware lately. I've updated my scanner driver, bought the CDR Suite from Anodyne, and am in the process of upgrading my NDVI to version 5 so that I can try to make the Phototip demo work with my new (inexpensive) digital camera.
