Really, where top start...
You can do word processing, databases, spreadsheets, access the 'net if you're keen :-), and of course use the midi ports to interface with keyboards and other midi instruments and make music. If you're interested in programming (as a lot of retro collectors are, usually just BASIC pokes and stuff), then you can program in nearly any language on the ST - basic (many versions), c, c++, Assembler, Pascal, cobol, turtle logo! :-)... plenty more
