There are 2 empty sockets on the Mste mobo, I know that one is for a math co-pro, and I guess that the other is for a blitter. The problem with STE games, is that they usually assume that the blitter is present.
It may be worth finding a spare blitter, and seeing if some more STE games work.
BTW, the falcon has a different (better) type of Yamaha PSG, but I think it is backward compatible. I havent got a clue if DMA sound sampling is present, though I guess that it is the same as the STE. (why would atari omit it, the falc was supposed to be the STfm/E replacement???).

I think I can find this on the net (for STE anyway). I am lacking Falcon and MSte info. I downloaded the doitf030 and doitst archives, but they are passworded, and in German. (I dont know which is harder to crack, passworded zipfiles, or the German language! ;)
