Yup, you’re right. SCART has more than just RGB. From looking at a Jaguar pinout I see now that it has RGB and composite.
I can't say you won't ruin your monitor, but I have switched audio signals accidentally with composite color and it didn't do any harm.
Try making a cable attached to a 5-pin din connector. Connect pin 4 from the Atari (composite video) to pin 20 on the SCART connector. Connect pin 2 on the Atari (ground) to pin 17 on the SCART connector.
5 pin male din connectors can be found easily in the US at Radio Shack. You may have to find a local electronics store to find the proper SCART connector.
