Bruce Lee was a real fighter. What he did on screen was toned down version of his real fighting skills (so as not to kill someone on set).
Jackie Chan on the otherhand, is an actor, and has always been an actor. His fighting skills in the main are Chinese Drama School moves which are designed for maximum drama impact without causing any real damage (yes people do get hurt but so do all stuntmen occasionally). He may actually be able to fight well like a real martial artist, but its not anywhere near the level Bruce Lee got to.
I do like all JC films though, the best ones to watch are the older ones which are filmed in Cantonese with English subtitles, they are even more funny...
