Yes, GNU C, C++, all GNU tools and all Unix tools will live happily on ext2 filesystem. (it is used widely in linux world)

Of cuorse you'll have to install FreeMiNT to use it. Last stable beta is 1.15.12. Feel free to visit www.freemint.de.
