Your minixfs should NOT have the newfatfs and vfat entrys on it, it's ignored by the kernel anyway.
Just use a shell that's at least semi-modern and it will allow you to see and create long names.

The best thing to do is to install the Sparemint system, it turns your Atari into a very unix-like system, but still maintaining Atari and GEM compatibility (using N.AES for example).
To install sparemint there are several ways. Sparemint itself has no installation from a clean system, but instead builds on top of other installations. At least this was the situation half a year ago.
Popular "base" installations to build Sparemint on is the "Knarfs German Mint Distribution" (also available in english) and I think that ST-Computer magazine in germany ran a series of articles how to create a Sparemint system via the "mintnet for dummies" distribution.
The ST-Computer articles could perhaps be of benefit to translate into english for the one who understand both languanges and have the magazines. As I undertand the ST-Computer articles are "public domain" for anyone to translate and publish..
