The Falcon was meant to carry a 2.5" IDE drive internally and everything else externally.
Yes, a 2 GB SCSI harddisk would be supported and can be booted from if it does not require bus-arbitration. With SingleTOS however you will have to live with 2 1GB partitions (which would be wise anyway since blocksize of a 2 GB partition is just hillarious).
If you plan on using an internal IDE disk, 2.5" is easy to install and they've gotten cheap enough by now so it's a good solution. If you insist on getting a 3.5" drive, you will have to do some "rearranging" in your Falcon and i - personally - don't recommend it, it's crowded enough in the Falcon without a 3.5" harddisk in there.
Talking about speed: Basically every SCSI or IDE disk is "fast" enough for everyday use. On an unchanged Falcon you'll hardly notice any large differences in speed, even though the Falcon's SCSI is a bit slowish. So if you plan to transfer LARGE blocks of data at once, IDE might be the better choice.
Also, IDE is accelerated by a pure-busspeeder like Nemesis or Phantom while SCSI is not.
