Perhaps you can get a hold of some diagrams (schematics or PCB layouts) of the Jam-In that line audio manufactured? This had 8 ADCs (this may be the maximum possible, though I haven't thought about it enough to say). I have a Jam Pro, which has 8-ins and 8-outs, but haven't gotten around to reverse engineering it yet. (it works great tho!)
The extended joystick port latches very fast on input (i've read a 44khz signal through it) and latches in at least 1ms on output (haven't tried to push the port beyond that yet).
