There's also a difficulty with termination of the Zip drive, this is probably what is causing your difficulty.
I know it's a cumbersome way round, but can I suggest you do what I did ?
What I did was to buy a complete new set of leads for the connection, Falcon - Zip, Zip - normal external hard disk (in this case, System Solutions external HD)
These cables are available to purchase from Maplin and are well recommended.
If you're not aware of the pinouts, the Falc SCSI port is actually SCSI-2 (SCSI-II), the Zip drive port is 25pin and the ext HD port is SCSI-1. Sorry if this sounds confusing, but this was the solution I used to get my Zip drive to be recognised by HD Driver as a useable device.
I never did find out how to boot from it though ..
