I think you are going the wrong route. You don't need the Jaguar pad to duplicate the joystick. All you need is software to allow an input from the Jaguar pad to correspond to a command to the joystick controller. Then you just use the Jaguar pad's native port (on the Falcon and STe).
I'm 90% sure there is a program that allows the Jag to run as a joystick. I know that there is a program that allows the Jag to run as a mouse -- I have a copy.
