Yes you are right, I read again fcsamiga and it seems that XC is for pre-series.
Czuba site says the CT60 can handle EC, LC or Full 68060, but of course there will be no MMU in EC and LC and no FPU in EC.
For FPU, missing instructions from 68882 will be emulated in flash-rom (there will be 2 versions of the library, one for LC and Full and one for EC, with more instructions of course). This is from http://www.czuba-tech.com/CT60/english/fpu.htm
For MMU, I think there are not so much program who use it (Ouside, Mint in protected mode, Linux, others?)
As Czuba says, the 60 choice depends of the sofwares you will use.
