Basically, you can't. The 060 is not pin compatible with the 040, and it's also a 3.3V CPU, not 5V like the 040. However, it's possible to buy an adapter to fit a 060 to a 040 slot. I have one in my Milan040 (now Milan060), but I have no idea if it will work with your Mac. The 060 isn't completely 040 compatible either (it lacks a couple of instructions, there might be issues with the PMMU too). This is solved with an emulation library from Motorola, I have no idea if it works on the Mac.
