Mario Becroft in New Zealand has designed such an IDE Interface for the STE.
I don't think you need any additional adapter except for maybe a 3.5" 40-pin to 2.5" 44-pin IDE-cable.
You also do not necessarily need TOS 2.06 to use an IDE-harddisk, but the STE cannot boot from this harddisk with anything else but TOS 2.06.
