You never thought it might be a good idea to contact the fVDI author (me, that is ;-) regarding your problems?
Most often, these kinds of problems come from using ancient versions of fVDI and its drivers (which, unfortunately, seemed to be what David was still including with the card when I last checked), or a bad configuration (the 'xbiosfix' and 'lineafix' options fix most problems I've heard of (assuming you are already running a reasonably recent version of fVDI and the RageII driver)).
It's been a very long time since I last had any program simply crash (or heard of one that did).

That shouldn't matter and, if anything, 256 colour mode is more likely to cause trouble than 16 bit (simply because neither I nor most other Eclipse owners ever use it and it thus is not as well tested).

Well, a 5-10 times or so speedup is not too bad either. ;-)
Of course, you'll get almost exactly the same speed in 16 bit mode, so why bother with 8 bit?

What version of the software did you use?

Which should be the case for the Eclipse/RageII as well, unless you are doing something wrong (or actually do have a bad card, but if it does not crash all the time, that is not likely).

I'd be very interested in hearing about the programs you were having trouble with. It would really surprise me if your problem isn't what I described above.
If there was indeed some other kind of problem, all the more reason to get in touch with me. I obviously can't do anything about things I don't know about.
