Aranym is worth a look too, but it's *very* fussy, most of the essential configuration options are only accessible by editing the config file by hand, and it likes to silently quit if the options aren't set right.
I'd go with Hatari. I've just slaved a Compact Flash card off my Falcon's hard drive using a dual 2.5" IDE cable, and thanks to HDDriver, was able to back up the contents, pop the card into my Mac, copy the contents of each partition into separate folders (named after each drive letter) and pointed Hatari's GEMDOS folder at them. It booted first time to my familiar desktop! I'm incredibly impressed.
