Yes, it should be possible.
First you should configure NFS, then create script that mounts NFS filesystem and run it from MINT.CNF.
The worst problem you have to solve is to create corret ALIASes, becouse ALIASes are always executed before running any EXEC, so there will be a time when you will have ALIASes pointing to never-never-land. You can also try ln to crate symlinks after mounting NFS filesystem, but I don't know if it is possible to create links on U:.
