The ST *can* do direct to disk recording. All you need is the proper audio digitizer and software. The 2bit systems units (sold through hisoft years ago) were good and if you wrote yoru own software you could record direct to disk.

Theres a cart port based digitizer I'm working on that will support full 16bit stereo at 32, 44.1, and 48khz sample rates. Its not ready for release yet but when it is I'm planning on it being released commercially.

Also the Falcon030 (if you can grab one) is excellent for audio recording since its got much of what you need built in.
