Yes, it is possible, using the IP masquerading facility of STinG. IP masquerading
allows several computers to be connected to the Internet using only one connection and IP address. You will need to have one of your Atari's as the
'host' computer, i.e. the machine that has the modem attached and performs
the connection to the Internet. You will then need to connect your other two
Atari's to this machine and setup IP masquerading. Once you have connected
to the Internet you will be able to access the Internet on any or all of the machines
at the same time. Setting up IP masquerading isn't too difficult and you will find
the exact details of how to do this in the STinG docs.
I have used IP masquerading to allow my Hades and Falcon to access the
Internet at the same time and it works very well. STinG even provides a
remote dial-up utility so that you can request a connection from any machine
on the LAN!

You should be able to use any Internet software on this sort of setup,
but I know AIRC works.
