One thing's for sure, if you can get a 1:1 sector image of the disk, the data can be retrieved one way or the other (for example both hatari and aranym support mounting a disk image). Just make sure it's a raw image with no headers like norton ghost does - anything from using dd on *nix systems to using a hex editor that supports reading raw partitions and copying them to a file (like for example winhex) will do perfectly.
If you do decide to go this route, then keep us posted!
Other solutions include transfer through serial port using a cross rs232 cable and ghostlink, or via parallel port and parcp (although both these solutions will take their sweet time to transfer stuff over).
A triple 2.5" cable is indeed not easily obtainable but I think the amiga people (like amibay for example) have some of those occasionally.
